Azerbaijani cuisine harmoniously combines culinary culture, its history, philosophy, table psychology, customs, physiology, hygiene, chemistry, equipment, ethics, aesthetics, poetry and other aspects of cuisine as well as practical habits created by Azerbaijani people in territories historically living in perfect harmony with the environment. Naturally, the most important factor influencing the creation and development of cuisine is climate. It is enough to mention that there are 8 climate zones on the territory of Azerbaijan. This defines specific diversity and richness of flora and fauna of the region, creates favorable conditions for life and development of all animals and plants. And this is the main base for creating rich cuisine.
